Holiday Treat: Deviled Eggs

Deviled Eggs. I LOVE 'EM! It's turned into tradition that my mother and I get together and make a batch or two for the holidays. Occasionally we are even joined by one of my beautiful sisters. We usually make a batch for Thanksgiving and again for Christmas -- because everybody wants more! Here is a pic of one from our latest batch.

It fairly easy to make and fun when you have friends or family to make it together with.

Here is a basic recipe (we tend to wing the measurements and make it to out taste)

  • Ingredients 12 large eggs, hard boiled and peeled
  • 1/4 cup mayonnaise
  • 1 1/2 tablespoons sweet pickle relish
  • 1 teaspoon prepared mustard Salt and pepper, for taste
  • Paprika, for garnishing
You could even add sweet gherkin pickles sliced and/or Pimentos for garnishing

Halve your 12 eggs lengthwise. Remove yolks and place in a small bowl. Mash yolks with a fork and stir in mayonnaise, pickle relish, and mustard. Add salt and pepper, to taste. I also like to add in a little (dried or fresh) celery and parsley. Fill egg whites evenly with yolk mixture. Garnish with paprika, pickles and pimentos. Store covered in refrigerator.

Thanks to foodnetwork.com for some of the measurements. :)
